1 ½ to 2 pounds round steak, ½ inch thick
2 beaten eggs
2 tablespoons milk
1 cup fine cracker crumbs
¼ cup fat
salt and pepper
Cut steak into severing pieces.
Pound steak thoroughly, or ask meatman to do it.
Mix eggs and milk.
Drip meat into egg mixture, then into cracker crumbs.
Brown slowly on both sides in hot fat.
Season with salt and pepper.
Cover tightly; cook over very low heat 45 to 60 minutes or till tender.
